Banana Yogurt Cake
This cake can be enjoyed for breakfast, lunch, dinner, or as a snack. It is excellent on its own, but you can also indulge a little and serve it with plain or peanut butter, jam, or a delicious homemade hazelnut cream for a sweet treat.

Ingredients

120 ml Oil, plant, sunflower

160 g Sugar, white

3 pieces Egg, fresh

225 g Wheat flour, white, multi-purpose

1.5 teaspoons Baking powder

0.5 teaspoons Spices, cinnamon, ground

2 piece Banana, fresh

150 ml Yogurt, plain, from skimmed milk

Preheat the oven to 180 degrees Celsius. Grease a deep rectangular baking dish (approximately 26 x 11 cm) with a little oil and line it with baking paper.

Sift the flour into a bowl and mix it with cinnamon and baking powder. In another bowl, whisk together the oil, sugar, and eggs with a hand whisk. Mix the dry ingredients into the wet mixture.

Peel the bananas and slice them into rounds. Place the slices in the bowl with the dry ingredient mixture. Mash the banana slices well with a fork, then mix the banana mash along with the yogurt into the batter.

Pour the batter into the baking dish and spread it evenly with a spatula or the back of a spoon, smoothing the top. Place the dish in the preheated oven for 60 to 75 minutes. After one hour of baking, check if the cake is done by inserting a toothpick into the center. If the toothpick comes out clean, the cake is baked. If not, bake for an additional 10 to 15 minutes. Once baked, remove the cake from the oven and let it cool in the dish for about 10 minutes.

Slice the cake while it is still warm or completely cooled and serve it plain or with various spreads and jams.

Advice
Instead of sunflower oil, you can use coconut oil, which should be melted at the beginning of the preparation.
