Ingredients
-
75 g Rice, Wild

1 piece Green, raw
-
1 piece Small pumpkins

Steps
-
Drain the barley, place it in a pot, and cover it with cold water, adding a bit of salt. There should be enough water to completely cover the barley. Bring to a boil, then simmer on moderate heat for 30 minutes until it softens. Drain the cooked barley and let it cool.
-
Meanwhile, prepare the vegetables. Peel the onion, carrot, potato, and zucchini, and cut them into small cubes. Thoroughly wash the tomato and celery stalk, and chop them into pieces. Take the beans from the can, drain them well, and rinse with water.
-
Place all the vegetables in a pot, cover with broth, and bring to a boil. Then reduce the heat and let it cook for another 15 minutes until the vegetables soften. Add the barley and a tablespoon of tomato paste, and cook for another 10 minutes. Season the minestrone with salt and pepper to taste. Serve in bowls and offer it to your guests.
