Barley Risotto with Beef
Barley is a healthy whole grain rich in fiber, and it can also be used to prepare delicious risottos. This time, its combined with vegetables and marinated beef. Since barley takes a long time to cook, we use pearl barley, which has its outer husk removed and is therefore quicker to prepare.

Ingredients

400 g Meat, beef, thigh

pieces Salt, table

pieces Soy sauce, shoyu

pieces Oil, vegetable oil, canola

1 piece Onion, raw

1 piece Shallot

1 piece Leek

4 pods Garlic, fresh

2 piece Carrot, fresh

1 piece Small pumpkins

200 g Barley, husked

6 dl Soup base, beef, cube

Steps

Soak the pearl barley overnight or for at least a few hours in water.

Slice the meat into thin strips and marinate it for at least two hours in a mixture of spices, two crushed garlic cloves, soy sauce, and a little oil.

Clean, wash, and chop the vegetables into pieces or slices. Slice the leek into strips, and finely chop the onion and shallot.

In a pan with oil, first sauté the onion, then add half of the leek and the carrots, and quickly sauté the vegetables. Add the zucchini, season, and sauté a bit more. Add two crushed garlic cloves and the soaked pearl barley. Sauté and pour in the broth. Cook for about 45 minutes, adding more water if needed. Once the barley softens, remove the pan from the heat.

In another pan or wok over high heat, sear the marinated beef. Remove the strips after 5 minutes, place them in a bowl, and cover.

Reduce the heat and in the same pan/wok, sauté the shallot. Add the remaining leek and wait until it softens slightly. Add the seared beef and mix.

Add the risotto from the other pan to the bowl with the beef. If needed, add a bit more soy sauce. Mix and sauté everything together for a bit longer.

Serve the prepared dish on plates. Optionally, sprinkle some chopped parsley on top.
