Barley Stew with Sausage
A simple rustic one-pot dish that is especially suitable for the colder months. Since it contains a lot of barley and vegetables, it is considered a healthy meal that fills and strengthens us.

Ingredients

250 g Barley, husked

1.5 spoons Fat, goose

1 piece Onion, raw

3 pods Garlic, fresh

3 pieces Carrot, fresh

2 spoons Tomato, concentrate

1 piece Spices, bay (leaves)

2 piece Carniolan sausage

1 can Beans, grains, cooked

Steps

Drain the soaked barley and rinse it under running water. Wash the carrot, peel it, and cut it into cubes or slices. Peel the onion and garlic, and finely chop them separately.

In a larger pot, heat the fat or oil. Sauté the chopped onion in the heated fat. Add the garlic and wait until it becomes fragrant, then add all the other ingredients except the beans and sausages. While stirring continuously, fry for another 2 to 3 minutes, then add cold water, which should cover the ingredients by about 3 fingers. Bring to a boil, cover the pot, and reduce the temperature so that the liquid barely simmers. Let the stew cook slowly for about 90 minutes. Add the sausages during the last 30 minutes. If necessary, add a little more water.

When the stew is almost ready, add the rinsed and drained beans to the pot. Season to taste with pepper and/or salt if needed. Cook the stew for a few more minutes, then serve it in deep bowls or soup bowls and accompany it with sliced bread.

Advice
For preparing the stew, you can also use dried beans, but in this case, they need to be soaked before cooking. Add them to the pot along with the other ingredients.
