Barley Stew with Smoked Pork Neck
A simple spoon dish that most often appears on our menu during the colder part of the year. This is when we more frequently reach for hearty one-pot meals that pleasantly warm the body and also fill us up. Among them is barley stew, which, in addition to barley, contains a lot of vegetables and smoked meat.

250 g Barley, husked

Steps

Drain the soaked barley and rinse it under running water. Place it in a larger pot and add cold water. There should be enough liquid to cover the barley by two fingers. Add bay leaves and a few peppercorns and place on the stove. Let the barley cook for 15 minutes. If you have a piece of skin from home-smoked bacon, add it to the pot so that the barley absorbs the flavor while cooking.

Meanwhile, clean and wash the carrots and parsley root. Cut the vegetables into roughly equal-sized pieces. After 15 minutes of cooking, add them along with a sprig of parsley to the pot where the barley is cooking. Cover and simmer the barley gently for 30 minutes.

Meanwhile, clean and wash the leek and cut it into rings or smaller pieces. Peel the garlic and finely chop it. Cut the smoked pork neck into pieces. Add the leek, garlic, and meat to the pot and let the dish cook for another 20 to 30 minutes. Season the stew with salt to taste, and optionally add other seasonings (thyme, ground pepper, lovage, etc.). During the last 10 minutes of cooking, add the drained beans, rinsing them under running water if desired.

Once the stew is ready, serve it on plates. You can sprinkle some chopped parsley on top. Serve with bread.

Advice
You can add other vegetables to the stew as desired (kohlrabi, turnip greens, bell pepper, potatoes, etc.). The cooled stew can also be frozen, as it retains its flavor excellently. When reheating, add a little water, as it usually thickens a lot.
