Basic Macaron Recipe
Macarons have recently become very popular here as well. Originally, they are a prestigious French dessert, consisting of two meringue-based "cookies" pressed together with a filling. The basic meringue mixture and filling can be colored with food coloring, creating a colorful array of delicious cookies that will be a hit at any party where you serve them!

Ingredients
Almond paste

56 g Egg, egg white, fresh

150 g Powdered sugar

150 g Nuts, almonds

2 g Vanilla, extract, natural

Grind the almonds and powdered sugar separately and sift them through a sieve. Take a mixing bowl and combine both ingredients. Add the coloring and mix well again. Then add the egg whites and mix until you get a marzipan-like consistency.

In another bowl, beat the remaining egg whites. Cook the sugar and water to 115 degrees Celsius (use a kitchen thermometer). While continuously mixing, pour the hot sugar syrup in a thin stream into the beaten egg whites. Continue beating until the egg whites cool to body temperature.

Mix the beaten egg whites and the almond mixture together. Stir well to achieve a smooth batter.

Fit a piping bag with a suitable tip and fill it with the prepared batter. Pipe the batter onto parchment paper, under which you have placed a macaron template to help pipe evenly sized circles. Once all the macarons are piped, let them dry for 10 minutes. They are sufficiently dry when the batter no longer sticks to your finger upon touch.

Bake the macarons at 152 degrees Celsius for 15 to 16 minutes. Once baked, let them cool and fill them with your desired filling.
