Basic White Soup
A versatile soup for all occasions. It can be used to thicken sauces, and with a few additions, it can be transformed into a main dish in no time!

Ingredients

60 g Butter, unsalted

80 g Flour, Wheat, bread flour

2 l Soup base, beef, cube

100 g Sweet cream

1 piece Egg, egg yolk, fresh

2 pinch Salt, table

2 pinch Spices, pepper, black

4 twig Thyme, raw
Steps

Thoroughly wash the parsley and finely chop it. Place a pot on the stove and melt the butter in it. Then add the flour and stir constantly until it changes color. Slowly add the soup stock spoon by spoon, stirring continuously to avoid lumps. Cook for about 5 minutes until the flour thickens and the soup becomes creamy.

In a separate bowl, mix the cream and egg yolk. Remove the pot from the heat and gently stir in the egg yolk and cream. Then return the pot to the stove, but only long enough to thoroughly mix in the yolk and cream. Immediately remove the soup from the heat again and season with salt and pepper.

Serve the prepared soup in deep bowls and garnish with chopped parsley. The basic soup can be used to enhance some sauces, or you can add additional ingredients and serve it as a hearty appetizer.

Advice
Before adding the egg yolk, be sure to remove the pot from the heat, otherwise the yolk could curdle. As additions, you can use leftover chicken, rice, dumplings, or noodles.
