Bavarian Cream with Biscuits and Raspberries

Ingredients

350 ml Sweet cream

5 g Gelatin powder, unsweetened

5 pieces Egg, egg yolk, fresh

120 g Sugar, white

300 ml Milk, whole milk

0.5 piece Vanilla, extract, natural

120 g Breadcrumbs, dried

2 spoons Alcohol, Liqueur, Crème de Menthe

50 g Raspberries
Steps

Break the baby biscuits into smaller pieces with your hands. Cover the bottom of the glasses with a layer of biscuits (reserve about half of the biscuits for garnishing the dessert). Drizzle them with a little raspberry liqueur.

Mix the gelatin in a bowl with a few tablespoons of cold water. Let it sit for 10 minutes to allow the gelatin to swell. Whisk the egg yolks together with sugar until frothy, creating a thick, light yellow cream.

Slowly bring the milk to a boil in a saucepan, adding half of the vanilla bean. Once it boils, remove the vanilla bean, take the saucepan off the heat, and gradually pour the milk into the egg yolk mixture while continuously whisking.

Pour the mixture back into the saucepan and place it back on the stove. Cook over moderate heat for another 10 minutes to form a cream. Stir continuously with a whisk or spatula while cooking.

Strain the cream, then mix in the soaked gelatin. Let the cream cool slightly.

Fold the whipped cream into the cooled cream. Distribute it into the glasses and refrigerate the dessert for about 3 hours to allow the cream to fully cool and set.

Garnish the cooled cream with the reserved biscuits and fresh raspberries. Serve the prepared dessert.
