BBQ Hot Dog Sandwiches

Steps

Preparation of cabbage salad: Grate the cabbage and apple, then mix with the remaining ingredients. Let it rest for half an hour to allow the flavors to blend.

Preparation of the onion filling: Peel the onions and slice them into thin strips. In a pan, cook them over moderate heat, stirring occasionally, until they soften and begin to caramelize, about 15 minutes. Season with salt and pepper, then add the beer and cook for a few more minutes until the beer evaporates. Finally, mix in the honey and mustard, then remove from the heat.

Wrap the hot dog sausages in bacon slices and grill them on all sides either on a barbecue or in a grill pan. Halve the hot dog buns and toast them on the grill as well.

Assemble the hot dog sandwiches: Spread either "Sausage sauce" or "BBQ beer mustard" on the bottom half of the bun. Top with either the cabbage salad or the onion filling, according to taste. Add pickles and grated cheddar cheese to the onion filling, and red onion slices to the cabbage salad. Place the grilled bacon-wrapped sausages into the buns, drizzle with sauce, and serve.
