Bean and Potato Salad
Beans and potatoes combined with olives, feta cheese, and a delicious dressing. A tasty and filling salad that will make you not miss meat at all.

Ingredients

400 g Green beans, fresh

700 g Potatoes, white

2 pod Garlic, fresh

50 ml Vinegar, balsamic

100 ml Oil, olive

1 spoon Juice, lemon

1 spoon Mustard

1 teaspoon Spices, oregano, dried

1 pinch Spices, pepper, red or cayenne

1 piece Onion, raw

100 g Olives, black, in brine

150 g Cheese, feta
Steps

Wash the beans, clean them, and cut them into approximately 5 cm pieces. Boil them until tender, which takes about 10 minutes. Drain and let cool.

Peel the potatoes, wash them, and cut them into bite-sized pieces. Boil them in salted water.

While the potatoes are cooking, prepare the dressing. Finely chop the garlic and mix it with balsamic vinegar, olive oil, lemon juice, mustard, oregano, cayenne pepper or black pepper, and salt.

Once the potatoes are cooked, drain them and mix them with half of the dressing while still hot. Let cool to room temperature.

Finally, thinly slice the onion and halve the olives, removing the pits. Mix the potatoes with the cooled beans, onion, olives, and crumbled feta cheese. Gently toss.

Mix in the remaining dressing just before serving the salad.
