Bean Minestrone
Old recipes from our grandmothers can be elevated by serving them in a slightly different way. However, the taste will never be the same as we remember from childhood, as there was always the love of our grandmothers present on the plates back then.

Ingredients

Steps

Clean and wash the vegetables. Finely chop the onion, garlic, leek, celery, and half of the carrot, and slowly sauté them in olive oil.

In another pot, place the smoked ribs, cover them with water, and cook for 10 minutes. Drain the water and set the ribs aside.

Meanwhile, peel, wash, and slice the potatoes, then add them to the pot with the vegetables. Sauté until they start to stick to the bottom of the pot. Add both cans of beans (including the liquid) and the other half of the carrot (cook it whole and dice it at the end).

Add the pre-cooked smoked ribs and bay leaves to the pot. Season with salt and pepper to taste, and pour in two liters of water. Cook for about 1 hour.

Remove the meat and half of the carrot from the pot, and dice them. Blend the minestrone with an immersion blender. If it's too thick, add a little more water and return the pot to the stove. Add small pasta and cook for another 5 minutes.

Turn off the heat. Cover the pot and let it sit for 20 minutes to allow the pasta to fully soften and absorb the flavors.

Serve the prepared dish in deep bowls. Garnish the minestrone with diced carrot and smoked meat, and serve with a piece of bread. Enjoy your meal.

Advice
Pre-cook the smoked meat a little to remove the overly smoky smell. If you want larger pieces of vegetables in the minestrone, you can mash it with a potato masher. If you have a sensitive stomach, its better to blend the minestrone with an immersion blender, as the skins of the beans can be hard on the stomach.
