Bean Soup

Ingredients

250 g Beans, grains

2 piece Carrot, fresh

2 piece Potatoes, white

0.25 piece Green, tuber

2 piece Spices, bay (leaves)

3 twigs Parsley, fresh

2 twigs Spices, mayonnaise, dried

100 g Meat, pork, smoked bacon

0.5 piece Onion, raw

2 pod Garlic, fresh

2 spoons Vinegar, red wine

0.75 teaspoons Salt, table

1 pinch Spices, pepper, black
Steps

Drain the soaked beans, place them in a larger pot, and cover with a generous amount of cold water. There should be enough water to cover the beans by at least three fingers. Place the pot on the stove and wait for the water to boil.

Peel the carrot, wash it, and cut it into small cubes. Once the water boils, drain the beans. Cover the beans again with an appropriate amount of cold water and place them back on the stove. Add the carrot and bay leaves to the pot.

Peel the potatoes, wash them, and cut them into cubes. Also peel the celery and cut it into cubes. When the beans are half-cooked, add the potatoes, celery, and all the spices to the pot. Season with salt to taste.

Peel the onion and garlic, and finely chop them. Cut the bacon into small pieces. In a pan, fry the chopped onion on the bacon. At the end, add the chopped garlic, wait until it becomes fragrant, then pour everything into the soup. Let the soup boil once more. Season the soup with vinegar and add additional spices if needed.

Serve the soup in soup bowls and enjoy.

Advice
People from Dolenjska add 1 dl of cviček (a type of wine) to the soup instead of vinegar. Preparation time is significantly reduced if you use canned beans.
