Ingredients

500 g Wheat flour, white, multi-purpose

1 spoon Lemon, fresh, without shell

Thoroughly wash the parsley and chop it finely. Beat the eggs and place them in a large bowl. Add flour, lemon juice, water, and a pinch of salt. On a floured work surface, knead all the ingredients into a smooth, elastic dough. Divide it into three loaves, which you generously coat with oil. Place the loaves in a bowl, cover, and let them rest for about half an hour.

Roll out each loaf thinly on a floured cloth, trim the thick edges, and brush the dough with oil. Drain the cooked beans and grind them into a coarse puree using a food processor.

Preheat the oven to 180°C. Season the bean puree with salt and pepper to taste, add two beaten eggs, sour cream, and chopped parsley, and thicken with breadcrumbs. Spread the filling over the dough and, using the cloth, tightly roll it into three rolls, which you carefully place in a greased baking dish. Bake in the preheated oven for about 40 minutes.

Once the strudels are baked, slice them into pieces, serve on plates, and offer with a side dish.
