Beef and Cheese Quesadilla

350 g Meat, beef, shoulder

2 piece Onion, raw

0.5 teaspoons Salt, table

0.25 teaspoons Spices, pepper, black

4 pieces Tortilla, wheat

8 slice Cheese, Cheddar

Steps

Wash the meat and thoroughly dry it with kitchen towels. Wrap it tightly with plastic wrap and place it in the freezer for about 30 minutes. Peel the onion and chop it into small pieces.

Place a large pan on the stove and heat 2 tablespoons of oil. Add the onion and season it with salt and ground pepper. Cook the onion, stirring occasionally, for about 4 minutes until it softens and turns golden brown. Transfer the sautéed onion to a plate.

Take the meat out of the freezer and unwrap it. Using a sharp knife, slice it thinly. Add 1 teaspoon of oil to the pan where the onion was sautéed. Heat the oil and sauté half of the meat. Stir occasionally to ensure even cooking. Transfer the sautéed meat to a bowl and cover it to keep it warm. Sauté the remaining meat in the pan.

Add the sautéed onion to the bowl with the meat and mix well. Season with additional pepper and salt to taste.

Wipe the pan used for cooking the meat with a paper towel. Place it back on the stove and heat two teaspoons of oil. Place a tortilla in the heated oil, wait 20 seconds, then flip it. Place 2 slices of cheese on the tortilla, and add 1/4 of the meat and onion mixture to one half. Fold the tortilla over the filling and transfer it to a plate. Repeat the process three more times.

Serve the prepared quesadillas on plates and accompany them with your choice of sauces.

Advice
We dont need to freeze the meat. We can roast it in one piece and then slice it thinly. However, it is true that slicing slightly frozen meat is much easier. A rump steak is a thicker cut taken from a well-trimmed roast beef. Instead of a rump steak, you can use beef fillet. Optionally, you can cut the prepared quesadillas into three pieces before serving.
