Beef and Potato Bean Stew
For the colder part of the year, hearty meat stews like beef goulash and segedin goulash often find their way onto our plates. In contrast, summer is characterized by bean stew. This is a simple meat and vegetable one-pot dish made with beans, meat, and tomatoes, to which we have also added potatoes in the recipe below. Since the dish is easily digestible, it is an excellent choice for hot summer days.

30 g Oil, vegetable oil, canola

400 g Meat, beef, side

1 piece Onion, raw

2 pod Garlic, fresh

2 piece Tomato, red

400 g Green beans, fresh

4 pieces Potatoes, white

250 ml Water

Steps

Wash the beef and dry it well with paper towels. Cut it into bite-sized pieces. Peel the onion and garlic, then finely chop them separately.

Clean and wash the vegetables, and peel the potatoes. Cut all the vegetables into smaller pieces. Place a larger pot on the stove and pour in the oil. Add the meat and quickly sear it on all sides. Then add the onion to the pot and sauté it with the meat, stirring until it softens and becomes translucent.

Add the chopped garlic and tomato to the sautéed ingredients. Season with salt and pepper to taste, mix everything together, and cover to simmer for 15 minutes.

Add the beans and chopped potatoes to the pot. Pour in 250 ml of water and cover the pot. Cook the stew over moderate heat for about 90 minutes or until the meat is tender. If necessary, add a little more water.

Once the dish is ready, taste it and adjust the seasoning with salt and/or pepper if needed.

Advice
Instead of beef, you can use pork or chicken. In this case, the cooking time will be slightly reduced.
