Steps

First, let's prepare the sauce. Peel and finely chop the garlic and ginger. Pour the strained tomatoes into a small pot and place it on low heat. Add garlic, ginger, orange juice, brown sugar, soy sauce, rice vinegar, and sambal ulek to the tomatoes. Mix the sauce well and cook on low heat for 8 to 10 minutes to thicken slightly. Stir occasionally while cooking.

While the sauce is cooking, let's prepare the balls. Peel and finely chop the garlic and ginger. In a large bowl, add oyster sauce, sugar, sambal ulek, ginger, garlic, and the remaining spices. Mix everything well. Then add the ground meat and coconut flour to the bowl. Mix everything very well and knead. Shape the mixture into small balls with your hands.

Pour oil into a wok or deep pan and heat it well. Fry the balls in batches in the hot oil for about 5 minutes until they are crispy. Remove the fried balls with a slotted spoon and drain on paper towels.

Pour the prepared sauce into a serving bowl. Arrange the fried balls on a large serving plate and insert toothpicks into them. Serve the balls on the table along with the sauce.

Sambal ulek is a very spicy chili sauce that can also be made at home. For frying, use a large amount of fat. The food must float in it. For frying, use fats that do not contain water, such as coconut fat or good oil. The fat is hot enough for frying if small bubbles form around a wooden spoon.
