Beef Bourguignon
A very old and well-known dish from French cuisine, characterized by the meat being cooked for a very long time. This gives the dish its unique and distinctive flavor.

600 g Meat, beef, shoulder

100 g Meat, pork, smoked bacon

350 g Shallot

20 pieces Mushrooms, mushrooms, fresh

1 spoon Tomato, concentrate, without salt

20 g Butter, unsalted

750 ml Alcohol, Wine, Red

Steps

Peel and wash the shallots. Prepare a bouquet garni. Wash and dry the rosemary, thyme, parsley, and bay leaves. Tie them all together with a string into a bouquet. Rinse the meat under running water and dry it thoroughly. Cut it into bite-sized pieces. Cut the bacon into smaller pieces. Rinse the mushrooms under running water, clean them, and cut them in half. Peel and wash the garlic.

Season the meat with salt and pepper. Place a larger pot on the stove and melt the butter in it. Brown the meat on all sides in the butter; cook each side for 4 minutes. It is recommended not to overcrowd the pot, so it's better to cook the meat in smaller batches. Set the browned meat aside on a plate.

In the same pot where the meat was browned, add the chopped bacon, shallots, mushrooms, garlic, and the bouquet garni. Sauté everything over moderate heat until the shallots are lightly browned. Add the tomato paste and cover, simmering for 2 minutes. Then add the meat and any juices it has released to the pot.

Pour in the wine and 1 dl of water and bring everything to a boil. Stir well and scrape the bottom of the pot if anything has stuck. Preheat the oven to 130 °C. Place the covered pot in the preheated oven and cook for 3 hours. Stir the dish several times during cooking.

Taste the prepared dish and season with salt and pepper if desired. Remove the pot from the oven and serve the Beef Bourguignon on plates. As a side dish, you can offer wide noodles or bread.
