Beef Chimichangas
Two types of meat, slightly spicy, but a great dish for all Mexican food lovers.

Ingredients

400 g Meat, beef, dried beef

3 pieces Sausage, chorizo

1 piece Onion, raw

3 pods Garlic, fresh

1 teaspoon Spices, cumin, seeds

2 pinch Salt, table

1 can Tomato juice

10 pieces Olives, black, in brine

8 pieces Tortilla, corn

30 dag Cheese, edamame

pieces Oil, vegetable oil, canola
Steps

Peel the chorizo sausage and crumble it into small pieces with your fingers. Heat a tablespoon of oil in a large pan and fry the crumbled meat while stirring. Once the meat is evenly browned on all sides, add the ground beef to the pan and cook it together with the crumbled sausage. Peel and finely chop the onion and garlic, then add them to the meat. Sprinkle with cumin and salt, and mix well. Cook everything together for about 7 minutes, stirring occasionally, until the beef is cooked through and the onion becomes translucent.

Once the onion softens, pour in the tomato puree and bring to a boil. Reduce the heat and cover the pan with a lid. Cook for 15 minutes, then uncover the pan and increase the heat to allow the liquid to evaporate. Rinse the olives, slice them into rings, and add them to the pan. Stir and remove from heat.

Quickly toast the tortillas on both sides in a dry pan and stack them on a plate. Place a spoonful of the filling in the center of each tortilla and sprinkle with grated cheese. Fold each tortilla by first folding the bottom part over the filling, then folding in the sides, and finally closing it with the top part. Secure with a toothpick.

Pour oil into a larger pan and heat it well. Fry the stuffed tortillas in the hot oil on both sides until they turn golden brown. Remove them from the oil with a slotted spoon and drain on paper towels.

Serve the chimichangas on plates, sprinkle with grated cheese, and offer with rice, fresh green-red salsa, and guacamole sauce.
