Beef Enchiladas
Enchiladas are a popular Mexican dish where tortillas are filled with meat, vegetables, or seafood, topped with tomato sauce, sprinkled with cheese, and baked in the oven. This time, we present a recipe for an exceptionally tasty and slightly spicy version with beef.

Ingredients

500 g Meat, beef, thigh

Steps

Peel and finely chop the onion. Drain the canned beans, rinse under running water, and drain well. Cut the beef steaks into strips.

Heat oil in a large pan. Add the onion and sauté until translucent. Then add the beef strips and cook until all pieces are nicely browned.

Season the cooked meat with salt, pepper, and chili. Add the tomatoes and beans, mix well, and simmer over moderate heat for 25 to 30 minutes.

Preheat the oven to 220 degrees Celsius. Open the can of diced tomatoes and pour the contents into a bowl. Lightly season the tomatoes with salt and pepper and mix well. Lay out the tortillas on a clean work surface. Spoon the filling onto the center of each tortilla, then roll them up and place them in a smaller deep baking dish. Pour the tomato sauce over the tortillas and sprinkle with grated cheese. Bake in the preheated oven for 15 to 20 minutes until the cheese is melted and nicely browned.

Clean, wash, and slice the green part of the spring onion into rings, and sprinkle them over the prepared dish. Serve with a large bowl of salad and a spicy cream dressing.
