Beef One-Pot Stew with Barley
One-pot dishes are simple, fairly quick to prepare, and are especially welcome in winter as they warm and nourish us. Plus, theres not much dishwashing to do.

300 g Meat, beef, side

150 g Barley, husked

2 spoons Oil, vegetable oil, canola

50 ml Tomato, pieces - can

1.2 l Soup base, beef, cube

Peel the onion and garlic, wash them, and finely chop. Clean and wash the celery and carrots, then dice them. Wash the tomato, remove the stems and green parts, then cut it into smaller pieces. Rinse the pearl barley in cold water and drain well. Wash the meat, dry it, and cut it into 2 cm cubes.

Heat the oil in a large pot. Add the meat, garlic, onion, celery, and carrots. Stir and sauté over moderate heat for 7 to 10 minutes. Add the tomato pieces and tomato puree, mix well, and cook for another 3 to 4 minutes. Pour in the broth and add the pearl barley.

Cover the pot, reduce the heat, and cook for 45 to 55 minutes. Stir the stew occasionally. Season with salt and pepper to taste. Before removing the stew from the heat, check if the pearl barley is soft enough.

Serve the prepared stew in bowls with slices of homemade bread.

Advice
Instead of pearl barley, you can use hulled barley, which needs to be soaked for at least a few hours (preferably overnight) before cooking, and the cooking time should be extended to 2 hours. For preparing the one-pot stew, you should pre-cook the barley separately until half done. If the stew is too thick, dilute it with water. The flavor of the stew can be enhanced with chopped parsley, which can be sprinkled over the prepared stew before serving.
