Beef Rolls

Ingredients

640 g Meat, beef, dried beef

3 pinch Salt, table

2 pinch Spices, pepper, black

6 spoon Mustard

5 pieces Cucumbers, sour

5 slice Meat, pork, thigh

5 pieces Spices, bay (leaves)

2 piece Onion, raw

3 spoons Oil, vegetable oil, canola

1 spoon Tomato, pieces - can

125 ml Alcohol, Wine, White

250 ml Soup base, beef, cube
Steps

Rinse the steaks under running water and pat them dry. Use a meat mallet to pound them as thin as needed. Then lightly season both sides of the steaks with pepper and salt. Spread mustard on one side of the steaks. Place the remaining mustard in a mortar.

Drain the gherkins and slice them lengthwise into thin strips. Lay the steaks out on a clean work surface. On the mustard-coated side of each steak, place a strip of gherkin and a slice of pancetta. Roll up the steaks and tie them with kitchen twine. Insert a bay leaf into the twine and brush the rolls with the remaining Dijon mustard.

Peel the onion and chop it finely. Place a pan on the stove and heat it up, then add oil. Sear the rolls on all sides in the hot oil, which takes about 5 to 7 minutes. Transfer the rolls to a plate and add the onion to the pan. Sauté the onion until it becomes translucent and softens slightly.

Return the rolls to the pan, add tomato paste, pour in wine and broth, mix everything well with the drippings from the rolls, and wait for the liquid to come to a boil. Cover the pan and simmer everything on low heat for about 60 minutes. Cook very slowly, otherwise, the meat will be tough. The meat should be so tender that it can be easily pulled apart with a fork.

Remove the kitchen twine from the rolls if desired, slice them, and serve with the prepared sauce. Serve alongside mashed potatoes.
