Ingredients
-
700 g Meat, beef, breast
-
0.5 teaspoons Salt, table
-
3 pinch Spices, pepper, black
-
2 teaspoons Mustard
-
4 slice Ham, pressed
-
4 pieces Cucumbers, sour
-
4 pieces Egg, fresh
-
2 spoons Oil, vegetable oil, canola
-
300 ml Alcohol, Wine, Red
-
300 ml Soup base, beef, cube
-
2 piece Spices, bay (leaves)
-
1 twig Rosemary, fresh
Steps
-
Hard-boil the eggs and let them cool. Rinse the beef slices under running water and dry them well with paper towels. Place a piece of transparent food wrap on the work surface. Lay the beef slices on the wrap and cover with another piece of wrap. Pound them well with a meat mallet until they are evenly flattened. Remove the top layer of wrap and lightly season the beef slices with salt and pepper. Spread mustard on one side of each slice.
-
Place a slice of cooked ham on each piece of beef (on the side spread with mustard). Cut the pickles lengthwise into thin slices and arrange them over the ham slices. Peel the eggs and place one egg on each piece of beef. Roll up the meat and secure the rolls well with toothpicks.
-
Preheat the oven to 200 degrees Celsius. Heat oil in a pan and sear the rolls on all sides until well browned. Transfer the seared rolls to a baking dish. Pour wine and broth into the dish. Add a bay leaf and a sprig of rosemary. Cover the dish with a piece of aluminum foil and place it in the preheated oven for about 60 minutes. Remove the foil 15 minutes before the end.
-
Transfer the rolls to plates and pour the sauce from the baking dish over them. Serve with your choice of side dish.
