Beef Rolls with Paprika and Bacon
Preparing meat rolls is not overly complicated, so even those who are not very skilled in the kitchen can give it a try. The important thing is to secure the rolls well before baking (with kitchen twine or toothpicks) so they dont unravel during cooking.

600 g Meat, beef, thigh

4 teaspoon Mustard

2 piece Bell pepper, red, fresh

0.5 piece Onion, raw

8 slice Meat, pork, smoked bacon

3 spoons Oil, vegetable oil, canola

2 pinch Spices, pepper, black

300 ml Soup base, beef, cube
Steps

Rinse the steaks under running water and dry them well with paper towels. Place a piece of transparent food wrap on the work surface. Lay the steaks on the wrap and cover with another piece of wrap. Pound them well with a meat mallet until they are evenly flattened. Remove the top layer of wrap and lightly season the steaks with salt and pepper. Spread mustard on one side.

Peel the onion and slice it thinly. Drain the roasted peppers and cut them in half lengthwise. Remove and discard the seeds and stems. Heat 1 tablespoon of oil in a pan and sauté the onion, stirring until it becomes translucent and soft.

On the mustard-spread side of the steaks, layer half of the pepper, a slice of bacon, and the sautéed onion. Roll them up and secure well with toothpicks.

Heat the remaining oil in a deep pan and brown the rolls on all sides until they get a nice brown color. Then add the broth, cover the pan, and simmer the rolls over moderate heat for about 30 minutes.

A few minutes before the cooking time is up, crisp up the remaining bacon slices in the pan where you sautéed the onion. When the meat is tender, remove the rolls from the pan and arrange them on plates. Reduce the sauce in the pan slightly and season to taste with pepper and salt. Pour the sauce over the rolls and serve the dish with the crispy bacon and a side of your choice.
