Beef Steaks in Mushroom Sauce

Ingredients

2 spoons Wheat flour, white, multi-purpose

1 piece Onion, raw

500 g Soup base, beef, cube

2 handfuls Mushrooms, shiitake, dried

1 spoon Butter, unsalted
Steps

Place the dried mushrooms in a bowl and pour hot water over them. There should be just enough liquid to completely cover the mushrooms. Let them soak while you prepare the other ingredients.

Rinse the beef steaks and dry them well with paper towels. Lightly pound them on both sides and make small cuts along the edges if necessary to prevent them from curling during cooking. Season the steaks with salt and pepper on both sides and lightly flour one side. Peel the onion and chop it finely.

Heat oil or fat in a large pan and sauté the onion until translucent. Add the steaks and quickly sear them on both sides. Pour in the broth and use a spatula to scrape the bottom of the pan well to release all the caramelized bits that formed during searing. Add the soaked mushrooms along with the liquid they were soaked in and let the steaks simmer in the sauce, covered, over low heat for about 1.5 hours. If necessary, season the sauce with additional pepper and salt.

When the dish is ready, stir in the butter (and optionally thicken the sauce with a little flour or cream). Serve the steaks in the sauce on plates and accompany the dish with cooked rice or another side dish.
