Beef Stew with Carrots
The dish can be paired with numerous side dishes. It might pair best with mashed potatoes, which can also be made from other root vegetables, not just potatoes. Our suggestion is parsley, parsnip, or cauliflower mash, which pairs excellently with carrots and complements this flavorful meat and vegetable stew with their taste.

Peel and finely chop the onion and garlic. Clean the carrots (peel if necessary), wash them, and cut them into larger pieces. Wash the meat and dry it well with paper towels. Cut it into bite-sized pieces.

Heat 2 to 3 tablespoons of oil in a large pot with a thick bottom. In the heated fat, sear the pieces of beef on all sides in two or three batches. Once all the meat is seared, add another tablespoon of oil to the pot and toss in the chopped onion. Cook it over moderate heat, stirring, until softened. Then add the garlic and sliced carrots, and sauté until the garlic becomes fragrant.

Return the seared beef pieces to the pot. Add bay leaves and thyme, then pour in the broth. Season with pepper and salt, and bring to a boil. Reduce the heat, cover the pot, and let the stew simmer slowly for 1.5 to 2 hours, or until the meat is tender. Add more liquid (broth or water) as needed during cooking.

Serve the prepared dish on plates and accompany it with gnocchi, dumplings, or mashed potatoes.

Advice
