Beef Wellington
Special occasions call for special recipes. And Beef Wellington is definitely one of those very special dishes. The base is a beef tenderloin, coated with a paste of mushrooms, shallots, and spices, and baked in a puff pastry crust.

Ingredients

250 g Dough, puff

2 spoons Oil, olive

1 kg Meat, beef, fillet - lung roast

125 g Meat, pork, smoked bacon

3 pieces Onion, raw

200 g Mushrooms, mushrooms, fresh

1 piece Egg, fresh

15 ml Milk, skimmed

4 pinch Salt, table

3 pinch Spices, pepper, black

1 twig Spices, rosemary, dried

Strip the rosemary sprig and finely chop the leaves. Rinse the beef fillet, dry it well, and season with salt, pepper, and chopped rosemary. Clean the mushrooms with a damp cloth and finely chop them (slice into thin pieces). Peel, rinse, and chop the shallots. Cut the bacon into small cubes.

Heat oil in a pan and quickly sear the meat on all sides. Place the seared meat on a warm plate. In the same pan, add the bacon and fry it. Add the chopped shallot and sauté for about five minutes until the shallot becomes translucent. Then add the mushrooms and season everything with salt and pepper. Mix well and remove from heat.

Preheat the oven to 220 °C. Roll out the puff pastry into a rectangle that should be twice the size of the meat. Spread half of the mushroom mixture evenly along the length of the fillet in the center of the pastry. Place the meat on top of the mixture and cover it with the remaining mushroom mixture. Wrap the pastry tightly around the meat and place it in a greased baking dish. In a bowl, whisk the egg and milk well. Brush the puff pastry with the egg mixture. Make three holes in the top layer of the pastry. Place the dish in the preheated oven for 45 minutes.

Remove the Beef Wellington from the oven and slice it into two-centimeter-thick pieces. Serve with potatoes and seasonal vegetables.
