Begova Chorba
A classic of Bosnian cuisine, quite popular among those who enjoy thick and hearty stews. It has a delicate and rich flavor, suitable for all seasons, especially for winter days when this rich, creamy, thick stew warms the soul and body. One of the ingredients of Begova Chorba is okra, which is hard to find here, so this recipe is written in such a way that if you dont have it or dont want to use it, you can omit it.

Ingredients

500 g Meat, chicken, thighs

1 spoon Butter, unsalted

2 spoons Wheat flour, white, multi-purpose

1 piece Egg, egg yolk, fresh

Steps

Wash the meat and place it in a pot. Peel the vegetables (carrots, celery root, parsley root, and onion) and add them to the meat. Add bay leaf, spice mix, and whole peppercorns.

Pour in water and let it simmer on low heat for one hour if using chicken, and at least two hours if using hen meat.

Remove the meat, carrots, and parsley root from the pot. Strain the broth.

Chop the vegetables and meat into desired-sized pieces.

In another pot, add a tablespoon of butter and two tablespoons of flour. Cook the flour until it turns golden. Pour in two liters of the strained broth and stir to avoid lumps. Add the chopped vegetables and meat. Simmer on low heat for about 15 minutes.

Mix the egg yolk and a tablespoon of sour cream until smooth. Add the mixture to the boiling broth and stir well. Season with salt and pepper to taste. Remove from heat.

Pour the prepared chorba into bowls and sprinkle with chopped parsley. Serve the dish.

Advice
If you decide to use okra, cook it in a little water with the juice of half a lemon. When it becomes soft, rinse it well with water and add it to the dish when you add the cooked and chopped vegetables.
