Ingredients

500 g Wheat flour, white, multi-purpose

1.5 teaspoons Salt, table

1 dl Milk, whole milk

21 g Yeast, dry

0.5 teaspoons Sugar, white

2 dl Water

1 piece Egg, fresh

0.5 teaspoons Spices, cumin, seeds

Pour the milk into a small bowl. Add sugar and crumbled yeast, mix well, and let it sit in a warm place to allow the yeast to rise slightly (about 10 minutes).

Sift the flour into a bowl and make a well in the center. Sprinkle salt around the flour near the well, and pour the risen yeast into the well. Add lukewarm water, then mix all the ingredients with your fingers or a spoon until they come together into a rough dough.

Transfer the dough to a floured surface and knead it until it becomes soft, pliable, and elastic, and no longer sticks to your hands or the work surface. Shape the kneaded dough into a loaf, dust it with flour, and cover it with a clean cloth. Let it rise in a warm place for 30 minutes or until its volume doubles.

Preheat the oven to 220 degrees Celsius. Grease a large, low baking dish with oil or butter (you can also line it with baking paper). Quickly knead the risen dough, then place it on the prepared baking dish. Use your hands to stretch it into a circle 30 to 35 cm in diameter. The dough should be slightly thicker in the center than at the edges, where it should be 1 to 2 cm thick. Use a wheel or knife to score diagonal lines into the dough at 4 cm intervals, making sure the edge of the flatbread remains intact. In a small bowl, beat the egg well and brush it over the flatbread. Sprinkle coarse salt and caraway seeds on top. Bake the flatbread in the preheated oven for 20 to 25 minutes. To check if the flatbread is done, tap the bottom with your fist – if it sounds hollow, it’s baked.

Advice
If you don’t have a warm kitchen, you can use the oven – preheat it to 50 degrees Celsius and place the bowl with the dough inside. The baked Bela Krajina flatbread should be lightly browned, with a height of 3 to 4 cm in the center and 1 to 2 cm at the edges. You can replace the milk entirely with water.
