Berry Jam
To prepare this excellent summer jam, you can use any fresh berries: strawberries, blueberries, raspberries, currants, or blackberries. Use a combination that you like the most, and if desired, you can also add a pinch of your chosen spices to provide additional flavor and a pleasant aroma.

Before starting the jam preparation, place a small plate in the freezer. Thoroughly wash the jars and lids and place them in the oven preheated to 80 degrees Celsius for at least 15 minutes.

Uncover the bowl with the fruit and gently stir the fruit with a cooking spoon. Transfer the fruit along with the fruit juice and any undissolved sugar into a suitably sized pot for making jam. Mix in the lemon juice, then place the pot on the stove.

Cook the fruit on low heat until all the sugar dissolves, then increase the temperature to bring the fruit to a boil. Let it simmer gently for 5 minutes, then lower the temperature and perform a gel test. Drip the jam onto the cooled plate, wait a bit, then push it with your finger. If it wrinkles, it's ready. If it doesn't wrinkle, cook it for a few more minutes (2 to 3 minutes).

Once the jam is ready, remove the pot from the heat and skim off any foam from the surface with a spoon. Fill the hot jars with the hot jam, leaving a finger-width space below the rim. Seal the jars tightly and turn them upside down. Wait for 10 minutes, then turn the jars right side up, cover them with a thick blanket, and let them cool slowly.

Advice
Store the jam in a cool, dry, and dark place. Once opened, keep it in the refrigerator. Optionally, you can add a small piece of butter, ground cinnamon, and/or ground cloves to the jam.
