Steps

Wash the raisins, shake them into a bowl, pour over a mixture of rum and water, and let them soak. In another bowl, crumble the yeast and mix it with a little sugar, lukewarm milk, and a bit of flour. Let it sit in a warm place for about 15 minutes to allow the yeast to rise.

In a small pot, slowly melt the butter over low heat. Remove from heat and, once the butter has cooled to lukewarm, mix in the sugar, salt, lemon zest, egg, and egg yolk.

Sift the flour into a bowl and make a well in the center. Pour the risen yeast mixture into the well. Add the egg-butter mixture and knead the ingredients into a smooth, pliable, and quite soft dough. Cover it with a cloth and let it rise in a warm place for about 30 minutes.

While the dough is rising, prepare the filling. In a bowl, cream the softened butter and sugar until fluffy. Mix until the sugar is completely dissolved.

Roll out the risen dough on a lightly floured surface to about 0.5 cm thick in the shape of a rectangle. Spread the buttercream over it and sprinkle with the drained raisins. Roll it up tightly into a log and cut it into approximately 5 cm pieces.

Grease a round or rectangular baking dish well with butter. Place the butter rolls upright next to each other in the dish. Cover them with a cloth and let them rise in a warm place for 15 minutes.

Preheat the oven to 190 degrees Celsius. Brush the risen rolls with melted butter and sprinkle with sugar. Bake the pastry in the preheated oven for 25 to 30 minutes. Serve while still warm.
