Ingredients

30 dag Wheat flour, white, multi-purpose

1 bag Vanilla, extract, natural

1 teaspoon Lemon, fresh, without shell

2 piece Egg, fresh

1 spoon Cocoa, powdered, unsweetened

2 spoons Milk, whole milk

Cut the butter into pieces and finely grate the zest of one lemon. Sift the flour together with the baking powder into a larger bowl and sprinkle the butter pieces on top. Add sugar, lemon zest, vanilla sugar, ground almonds, egg, and egg yolk.

Quickly knead all the ingredients into a crumbly dough, which we divide into two parts. To one half, add a mixture of cocoa, coffee, milk, and sugar. Shape both doughs into balls, wrap them in foil, and place them in the refrigerator for one hour.

Beat the egg whites with a hand mixer until stiff peaks form. On a floured surface, roll out both types of dough and cut out squares of the same size. Spread the dark dough well with egg white, then place the white dough on top and roll it all up into a roll, which we place in the refrigerator for one hour.

Preheat the oven to 180 degrees Celsius and line a baking tray with parchment paper. Then cut the roll into slices, which should be about 0.4 cm thick. Before baking, brush each cookie with egg white. Arrange the cookies on the baking tray and bake in the preheated oven for 15 minutes.

Once the cookies are baked, let them cool completely. Place the cooled cookies on a serving platter and serve.

Advice
For a better taste, you can add a few drops of rum to the dough. Bake the cookies in a preheated oven at medium height. It is best to use organic lemons, the peel of which is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes, then wipe it well to remove the wax, which contains toxins.
