Blondies with Mascarpone

Steps

Preheat the oven to 175 degrees Celsius. Grease a smaller deep baking dish (approximately 20 x 20 cm) with butter and lightly dust it with flour. In a bowl, sift the flour and mix it with baking powder, baking soda, and salt.

In a bowl, using an electric mixer, cream the softened butter and sugar. Add the egg and continue mixing on medium speed for about 3 minutes.

Add the mascarpone, lemon juice, and grated lemon zest to the egg-butter mixture. Mix well, then add the flour mixture with baking powder, baking soda, and salt. Mix just until a smooth batter without lumps forms.

Pour the prepared batter into the prepared baking dish and spread it evenly. Place the dish in the preheated oven for 25 to 30 minutes.

Once the blondie is baked, remove the dish from the oven and let the blondie cool in the dish.

Once cooled, cut the blondie into pieces of your desired size, serve on plates, and enjoy.

Advice
It’s best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes, then wipe it thoroughly to remove the wax, which contains toxins. Butter is easiest to soften by taking it out of the fridge at least an hour before preparation and letting it sit at room temperature.
