Blueberry and Homemade Curd Strudel
A delicious and juicy strudel with curd and blueberries is excellent served warm or cold. Serve it warm with a scoop of ice cream, or cold with a cup of hot beverage or a glass of good wine.

Steps

Mix flour, salt, water, and oil to make a stretchy dough, shape it into a ball, and brush it with oil. The dough needs to rest in a warm place, so place it in the oven at 50 degrees Celsius for 15 minutes.

Roll out the rested dough and then stretch it as thin as possible. Trim the thick edges.

Heat butter and oil in a pan and toast the breadcrumbs in the hot fat. Sprinkle the toasted breadcrumbs over the stretched dough.

Mix the blueberries with a little sugar, and mash the curd with a fork. First, spread the curd over the dough, then add the blueberries. Only spread the filling over 2/4 of the dough, leaving the end edge empty (wide enough for two empty rolls). Roll the dough and filling tightly.

Grease a baking dish with butter and bake the strudel at 170 degrees Celsius for 35 to 45 minutes.

As soon as the baked strudel is taken out of the oven, brush it with melted butter. Let it cool to room temperature (around 30 degrees), then dust it with powdered sugar and cut it into pieces of your desired size. Serve on plates and enjoy.

Advice
The dough can also be prepared using a mixer. The dough for the strudel must be stretched so thin that you can see through it.
