190 g Wheat flour, white, multi-purpose

115 g Butter, unsalted

350 g Blueberry, raw

Steps

Preheat the oven to 190 degrees Celsius. Grease a small deep square or rectangular baking dish well with butter. In a bowl, mix the flour, baking powder, 100 g of sugar, salt, and lemon zest.

In a small bowl, whisk the egg yolk and mix it with vanilla extract. Cut the butter into small cubes. Add the butter cubes and the mixture of egg yolk and vanilla extract to the bowl with the dry ingredients. Use your fingers to work the butter and egg yolk into the dry ingredients until a crumbly mixture forms. Spread about 2/3 of the mixture evenly over the bottom of the greased baking dish. Gently press the dough with your hands to form an even layer at the bottom of the dish.

In another bowl, mix 50 g of sugar, cornstarch, and lemon juice. Add the blueberries and mix everything well. Spread the blueberries evenly over the dough in the baking dish. Sprinkle the remaining butter crumbs over the top. Then sprinkle brown sugar over the butter crumbs. Bake the pastry in the preheated oven for 38 to 45 minutes, or until the butter crumbs on top turn a nice golden brown.

Remove the baking dish from the oven and let the pastry cool in the dish for 20 to 30 minutes. Once cooled, cut the pastry into pieces of your desired size, arrange them on a serving plate or platter, and serve.
