Ingredients
-
60 ml Juice, lime
-
60 ml Water
-
150 g Sugar, white
-
10 g Lime, fresh
-
450 g Blueberry, raw
-
2 spoons Alcohol, Rum
Steps
-
Place a saucepan with lime juice, water, and sugar on the stove. Heat slowly over moderate heat while stirring until all the sugar dissolves. Bring the sugar solution to a boil and cook on low heat for another 2 minutes. Remove the saucepan from the heat and add the mint leaves. Cover with a lid and let the syrup cool for 30 minutes.
-
Sort the blueberries and rinse them quickly under running water if necessary. Place them in an electric mixer and blend until smooth (you can also use a hand blender).
-
Remove the mint leaves from the cooled syrup. Pour the syrup into the electric mixer and mix everything well. Then add the white rum and mix the ingredients once more.
-
Strain the blueberry mixture through a fine sieve into a container; discard the solids. Cover the container with plastic wrap and place it in the freezer for at least 4 hours to set the sorbet. Stir the sorbet well several times while freezing (see tips).

Advice
While freezing, stir the sorbet every 30 minutes to prevent the formation of large ice crystals. Finally, mix the mixture well with a hand mixer. Instead of lime juice, you can use lemon juice. If you dont have fresh blueberries, you can use frozen ones, but they must be thawed first. The sorbet can also be prepared many days in advance and stored in the freezer. 30 minutes before serving, place it in the refrigerator to soften slightly.
