Bobići or Frmentonova Minestra
A simple one-pot dish made from corn, either young milk corn, also called bobići (in July, August) or frmenton. The word bobići is believed to originate from the word boba (also bobba), which would mean a thin soup or minestra, poor in ingredients and primarily for the poor. The word frmenton comes from the Italian word frumento or also frumentone, formentone, which means grain or corn. The winter version of bobići is therefore called frmentonova minestra, as it uses dried corn kernels that need to be soaked before cooking.

Ingredients

400 g Corn, yellow, fresh

100 g Beans, grains, cooked

1 piece Carniolan sausage

3 pods Garlic, fresh

200 g Potatoes, white

2 piece Carrot, fresh

pieces Salt, table

pieces Parsley, fresh

Steps

Drain the soaked kernels and place them in the pressure cooker along with well-washed smoked pork ribs or sausage, diced bacon, peeled garlic cloves, diced potatoes and carrots, and cooked beans. Season with pepper and salt. Before closing the pressure cooker, add water to the ingredients. Cook for at least 40 minutes.

Once the ingredients are cooked, remove the pressure cooker from the heat and carefully open it (be careful to avoid damage or explosion). Add chopped parsley and chives. Taste the minestra and if it seems under-seasoned, add more seasoning.

Serve the prepared dish in deep bowls and drizzle with extra virgin olive oil before serving. Offer with a slice or two of homemade bread.

Advice
If you dont have a pressure cooker, cook the minestra in a regular pot, but it will take more time.
