Bobotie
Bobotie, a renowned South African dish, closely resembles the British shepherds pie in preparation but differs in one significant detail: the amount of spices added. In bobotie, the flavors of numerous spices intertwine, and traditionally, dried fruit, tangy chutney, and an egg custard are added to the seasoned meat, generously poured over the ingredients before baking. The dish is served with boiled rice.

Ingredients
Dressing
-
3 pieces Egg, fresh
-
300 ml Milk, whole milk
-
pieces Salt, table
-
0.5 teaspoons Spices, turmeric, ground
-
pieces Butter, unsalted
-
25 g Butter, unsalted
-
2 piece Onion, raw
-
1 kg Meat, beef, ground
-
2 pod Garlic, fresh
-
2 spoons Spices, curry powder
-
2 spoons Jam
-
3 spoons Raisins, golden
-
7 pieces Spices, bay (leaves)
-
1 teaspoon Salt, table
-
0.5 teaspoons Spices, pepper, black
-
2 slices Bread, wheat
Steps
-
Peel the garlic and onion, then finely chop them separately. Soak the bread slices in cold water and let them soak.
-
In a suitably large pan, melt the butter and sauté the chopped onion until translucent. Add the ground meat and garlic, and fry over moderate heat, stirring until the meat darkens. Break larger pieces of meat into smaller chunks with a spatula. Add the spices, raisins, chutney, and two bay leaves. Mix well and add the crumbled bread, which has been well squeezed. Mix it thoroughly into the dish to eliminate any lumps. Remove the pan from the heat, discard the bay leaves, and let the mixture cool slightly.
-
Preheat the oven to 180 degrees Celsius. Grease a deep baking dish with butter and place the cooled mixture into it, spreading it evenly across the entire surface and gently pressing it down with the palm of your hand. In a bowl, whisk the eggs and milk until smooth. Season with turmeric, salt, and pepper, then generously pour the prepared mixture over the ingredients in the baking dish. Arrange the remaining bay leaves on top. Place the baking dish in the preheated oven for 35 to 45 minutes. The dish is done when the top turns golden brown and the edges are nicely baked. Serve with boiled rice or mashed potatoes.
