Boiled New Potatoes with Dill

800 g Potatoes, white

60 g Butter, unsalted

4 twig Dill, fresh

Thoroughly wash the potatoes and scrub them if necessary. Remove any eyes, green spots, or damaged parts. Cut larger potatoes into smaller pieces if needed, while leaving smaller ones whole.

Place the potatoes in a pot and cover them with enough cold water to fully submerge them. Salt the water and bring it to a boil. Once boiling, reduce the heat and let the potatoes simmer gently for about 20 minutes. Check if the potatoes are cooked by piercing them with a thin, sharp knife.

In a small pot, slowly melt the butter over low heat. Roughly chop the dill sprigs. Drain the cooked potatoes well, let them steam dry, then toss them with the chopped dill, salt, and pepper. Mix well and serve as a side dish with various meals.
