1.5 kg Meat, beef, thigh

500 g Shallot

0.75 teaspoons Salt, table

0.25 teaspoons Spices, pepper, black

2 spoons Butter, unsalted

0.5 l Soup base, beef, cube

2 teaspoons Koruzni škrob

Preheat the oven to 180 degrees Celsius. Peel the shallots and cut them in half. Rinse the meat under running water and thoroughly dry it with kitchen towels. Generously rub the meat with salt and pepper.

In a large pan, melt and heat the butter. Sear the seasoned piece of meat on all sides in the heated butter. Transfer the seared meat to a suitably sized baking dish. Surround the meat with the halved shallots and pour the broth into the baking dish.

Place the baking dish in the preheated oven. Braise the roast uncovered in the oven for about 2 hours.

Remove the roast from the oven and slice it into desired thickness. Strain the sauce from the baking dish into a smaller jug. Season the sauce to taste with additional pepper and salt. In a small bowl, mix cornstarch and water to form a smooth paste. Stir the paste into the sauce and quickly bring it to a boil.

Serve the slices of braised roast on plates and pour the prepared sauce over them. Serve with a side dish of your choice.
