Braised Green Beans with Mushrooms
We cook the green beans, sauté the sliced mushrooms, and combine the two main ingredients into a side dish that just needs seasoning. To top it off, place a piece of butter on the hot side dish so it slowly melts and spreads across the plate.

450 g Green beans, fresh

250 g Mushrooms, mushrooms, fresh

1.5 spoons Oil, olive

1.5 spoons Butter, unsalted

1 pod Garlic, fresh

0.25 teaspoons Salt, table

Place a pot of salted water on the stove. Clean the green beans (trim the stems and remove any strings), wash them, and drain. Cut them into a few cm-long pieces. Optionally, you can halve them lengthwise. Clean the mushrooms, rinse them quickly, and slice them into thicker pieces. Peel and chop the garlic.

When the water boils, add the beans to the pot. The beans should boil continuously. Cook them for 10 minutes, then taste every minute to check if they are done. They should be cooked but still firm. Drain the cooked beans well.

In a large pan, heat half of the oil and butter over moderate heat. Add the mushrooms and garlic and sauté for 5 minutes while stirring. Transfer the mushrooms and garlic to a plate. In the same pan, heat the remaining butter and oil. Add the green beans, season with salt and pepper, and sauté for about 5 minutes, stirring occasionally. Mix in the mushrooms, add lemon juice, and stir well. Divide onto plates, garnish with pieces of butter, and serve.
