Braised Lamb Shanks

1 piece Onion, raw

1 spoon Tomato, concentrate

350 ml Alcohol, Wine, White

500 ml Soup base, chicken, cube

Rinse the lamb shanks under running water and dry them with paper towels. Peel the onion, rinse it, and roughly chop it. Wash the carrot, peel it, and cut it into larger rings. Rinse the rosemary sprigs, shake them off, and strip the leaves. Peel the garlic.

Place a roasting pan on the stove, pour in olive oil, and heat it well. Place the shanks on the hot oil and roast them for 10 minutes on high heat. Turn them while roasting to ensure they are evenly browned on all sides. Then remove the lamb shanks from the pan (set them aside on a plate), lower the heat, and add the onion and carrot to the pan. Mix well and sauté the vegetables for 10 minutes, stirring occasionally.

Preheat the oven to 200°C. Add tomato paste, bay leaves, garlic cloves, and rosemary to the pan. Stir and sauté for another 2 minutes. Pour in the wine and broth, and mix everything well. Add the roasted lamb shanks and season everything to taste with salt and pepper.

Cover the pan and place it in the preheated oven for one and a half to two hours. Then remove the pan from the oven and take out the lamb shanks.

Place the pan back on the stove over moderate heat and bring the contents to a boil. Cook for a good 15 minutes. Remove the pan from the heat and strain the contents through a fine sieve to obtain a thick and flavorful sauce.

Arrange the shanks on plates and pour the sauce over each shank. Serve with your chosen side dish.
