Braised Pork Belly
Asians are known for using somewhat unusual ingredients in their cuisine. One such ingredient is definitely pork belly. However, once you take a bite of the juicy meat, you will taste Asian delicacies like never before.

Ingredients

1 kg Meat, pork, shoulder

150 g Ginger, fresh

2 spoons Oil, peanut

1 spoon Sugar, white

90 g Onion, young

3 pieces Chili peppers, red chili, dried

1 teaspoon Spices, pepper, red or cayenne

2 spoons Alcohol, Dessert wine

2 spoons Soy sauce, shoyu, less salt

1 piece Caraway, fresh

1 piece Spices, cinnamon, ground

1 teaspoon Salt, table

250 ml Water

Thoroughly rinse the pork belly under running water and drain. Place a large pot of water on the stove and bring it to a boil. Meanwhile, peel the ginger and slice it thinly. Submerge the pork belly in the boiling water along with the ginger slices. Cook for a good 5 minutes, skimming off any foam that rises to the surface with a skimmer. Then, drain the pork belly well and rinse it under cold water. Reserve the ginger slices. Cut the pork belly into 2.5 cm cubes.

Clean the spring onions, wash them, and cut them into 7 cm pieces. Place a wok (or a larger pan) on the stove and heat the oil and sugar over low heat. Stir frequently to prevent the sugar from sticking to the bottom. When the sugar begins to melt, add the pork belly cubes, ginger, and spring onions. Mix everything well. Then add the dried chilies and Sichuan pepper. Stir-fry everything on high heat until the ingredients are browned on all sides.

Pour the rice wine and soy sauce into the wok and mix everything well. Season with salt, add the star anise, cinnamon stick, and pour in water. Mix well and wait for the liquid to come to a slight boil. Cover the wok and simmer the dish on low heat for 2 hours. Stir occasionally and add water if needed.

Serve the braised pork belly on plates and accompany it with rice.
