Braised Sweet Cabbage with Bacon

It is excellent as a side dish to boiled or roasted meat, and together with a chosen side, it quickly transforms into a tasty and hearty main course that you will surely enjoy reaching for more often during the cold months.

Ingredients

50 g Oil, vegetable oil, canola

2 teaspoons Sugar, white

80 g Meat, pork, smoked bacon

1 piece Onion, raw

800 g Cabbage, fresh

2 pod Garlic, fresh

1 piece Spices, bay (leaves)

1 spoon Wheat flour, white, multi-purpose

2 spoons Tomato, concentrate

1 pinch Spices, cumin, seeds

Steps

Clean the cabbage, wash it, and cut it into strips. Peel the onion and garlic, and chop them finely separately. Cut the bacon into small pieces.

Heat the fat in a larger pot. On the heated fat, first caramelize the sugar, then add the chopped bacon and fry it. Add the chopped onion and slowly fry it together with the bacon over moderate heat, stirring occasionally. Before the onion turns golden, add the garlic, bay leaf, and the cabbage cut into strips. Mix the ingredients in the pot well and add a little water (about one ladle). Cover the pot and braise the cabbage covered for 20 to 30 minutes. Add more water if needed.

When the water evaporates, stir the cabbage and quickly fry it. Add tomato concentrate and cumin. Pour in enough water to make the dish nicely thick. Bring to a boil and season with pepper and salt to taste before serving.

Advice
Braised sweet cabbage can also be seasoned with a pinch of ground paprika (sweet, hot, or smoked). Instead of water, you can use a broth base for cooking.
