Brazilian Carrot Cake with Chocolate

Ingredients

8 pieces Carrot, fresh

120 ml Oil, vegetable oil, canola

4 spoon Sugar, brown

3 pieces Egg, fresh

1 teaspoon Vanilla, extract, imitation

260 g Wheat flour, white, multi-purpose

1 teaspoon Baking powder

100 g chocolate, dark

2 spoons Butter, unsalted
Steps

Preheat the oven to 180 degrees Celsius. Peel the carrots, wash them, and cut them into smaller pieces. Place them in a food processor (blender). Add oil, sugar, eggs, and vanilla extract, and mix everything well until you get a smooth orange mixture.

In a larger bowl, sift the flour and mix it with baking powder. Pour in the carrot mixture and mix well with a hand whisk (spatula) to get a uniform mixture. Pour the mixture into a greased cake pan (23 cm in diameter).

Bake the cake in the preheated oven for 40 to 45 minutes. The cake is done when a toothpick inserted into the center comes out clean.

Let the baked cake cool for 15 minutes, then remove it from the pan, place it on a wire rack, and let it cool completely.

For the chocolate glaze, melt the chopped chocolate and butter in a double boiler. Gently mix the melted chocolate to get a smooth chocolate mixture, then pour it over the cooled cake. Wait for the chocolate glaze to set (you can store the cake in the refrigerator), then cut the cake into slices, serve on plates, and enjoy.
