Ingredients
-
16 pieces Nuts, chestnut, fresh
-
2 piece Shallot
-
4 twig Parsley, fresh
-
100 g Meat, pork, smoked bacon
-
1 spoon Butter, unsalted
-
5 slice Bread, wheat
-
2 dl Milk, partially skimmed
-
1 piece Egg, fresh
-
1 handful Breadcrumbs, dried
-
1 pinch Salt, table
Steps
-
Make a slit in each chestnut. The cut should be deep enough to pierce through the shell but not into the flesh, as it may fall apart during cooking. Place a pot of water on the stove and bring it to a boil. Add the chestnuts to the boiling water and cook at a moderate temperature for 10 minutes. Then drain the water, peel the chestnuts, and cut them into 4 pieces.
-
Peel and wash the shallots, then finely chop them. Wash and chop the parsley. Cut the bacon into small pieces. Melt the butter in a pan and sauté the shallots until they turn golden. Add the parsley and bacon and cook for another five minutes, then remove the pan from the heat.
-
Cut the bread into small cubes and place them in a large bowl. Add the sautéed shallots with bacon and parsley. Whisk the egg in the milk and pour the mixture over the bread. Mix well and let it sit until the mixture is well soaked with the milk.
-
Once the mixture is soaked, add the breadcrumbs and chestnuts and mix again. Then transfer the mixture onto a damp cloth and shape it into a roll, wrapping it in the cloth. Place a large pot of salted water on the stove. Once the water boils, place the cloth with the mixture into the water and cook at a moderate temperature for 15 minutes.
-
Remove the cooked dumpling from the pot, unwrap it, and slice it into pieces. Serve it with a meat dish or on its own with various vegetables.

When cooking chestnuts, its good to check with the tip of a knife if the flesh is already soft. If not, extend the cooking time by a few more minutes.
