Bread Pudding with Panettone and Raisins
First, we need to explain what panettone is. It is a very light holiday cake made from leavened dough, often enriched with raisins or candied fruit. The cake is typical of Italy, but in recent years it has become increasingly popular here as well. And now that you know what panettone is, you can also try this exceptional bread pudding, which you can prepare from the leftovers of the holiday cake. The result is an incredibly delicious dessert that you can enjoy even more with vanilla sauce, whipped cream, or a scoop of ice cream.

50 g Butter, unsalted

250 g Dough, puff

70 g Raisins

2 spoons Alcohol, Whisky

2 piece Egg, fresh

140 ml Sweet cream

220 ml Milk, whole milk

2 spoons Sugar, white

1 teaspoon Vanilla, extract, imitation

Steps

Preheat the oven to 160 degrees Celsius. Grease a deep baking dish (approximately 850 ml capacity) with butter. Cut the remaining butter into pieces. Sort the raisins, wash them, and drain them into a smaller bowl. Pour warm brandy over them and let them sit for a while to absorb the liquid and soften. Slice the panettone into 1 cm thick slices.

In a bowl, beat the eggs well with a hand whisk. Add the milk and cream, then add the sugar and vanilla extract. Mix the ingredients well to form a uniform mixture.

Arrange the panettone slices in one layer on the bottom of the baking dish (the slices can slightly overlap). Distribute some pieces of butter over the slices and sprinkle with 1/3 of the soaked raisins. Follow with another layer of slices, over which you sprinkle the remaining raisins. Then pour the egg mixture over the bread pudding and finally top with the remaining pieces of butter.

Place the baking dish with the bread pudding into a larger deep baking dish and pour in enough hot water to reach halfway up the sides of the bread pudding dish. Carefully place both dishes into the preheated oven and bake the bread pudding for 35 to 40 minutes. It is done when the top is nicely golden brown and the inside is a beautiful yellow color.

Sprinkle the baked bread pudding with powdered sugar and serve with vanilla sauce, whipped cream, or a scoop of ice cream.
