50 g Butter, unsalted

200 g Spinach, raw

pieces Bread, wheat

150 g Cheese, feta

5 pieces Egg, fresh

500 ml Milk, whole milk

2 spoons Mustard

Steps

Rinse the spinach under running water, drain well, and dry. Add it to a pan where we have melted butter and quickly sauté it. When the spinach wilts and softens, remove the pan from the heat.

Grease a deep baking dish for the pudding with butter. Cover the bottom with slices of bread and spread the sautéed spinach over them. Crumble feta cheese on top.

In a bowl, whisk the eggs, milk, and mustard until smooth. Season the mixture to taste with salt and pepper, then pour it over the ingredients in the baking dish. Gently tap the dish on the counter to evenly distribute the mixture. Cover it with plastic wrap and refrigerate for at least 30 minutes (preferably for 8 hours or overnight).

Bake the pudding in an oven preheated to 180 degrees Celsius for about 35 minutes. When the cheese and egg mixture turns golden brown, remove the dish from the oven. Serve the dish while still hot, accompanied by a bowl of salad.
