Breaded Turkey Fillets with Fruit Salad

Steps

First, peel all the oranges with a small sharp knife. Do this by first cutting each fruit crosswise at the top and bottom. Then place it upright on a cutting board. Peel it from top to bottom with a sharp knife, including the bitter white pith. Once the fruit is peeled, use the knife to cut the side of the segment so that it separates from the skin covering it. Repeat the same process for the other side, remove the segment, and store it in a bowl. Continue until all the oranges are cut into segments.

Thoroughly wash and dry the turkey breasts with paper towels. Then cut them into four fillets, season them with salt and pepper to taste, and optionally pound them slightly. Beat the eggs in a large (deep) plate and whisk them with a fork. Spread flour on another plate and breadcrumbs on a third. Coat the fillets first in flour on both sides, then dip them in the egg mixture, and finally roll them in breadcrumbs.

Wash the lettuce well, clean it, dry it, and remove the core. Clean the lettuce leaves, shake them in a colander, and wash them thoroughly. Place all the lettuce in a separate bowl, mix it with the orange segments, and drizzle with lemon and orange juice. Season with salt to taste and sprinkle with oil.

Place a deep frying pan on the stove and heat it well, then heat the oil in it. Be careful not to let the oil start smoking. Place two breaded fillets at a time into the hot oil and fry them for two to three minutes on each side or until they turn golden brown.

Once the fillets are cooked, place them on paper towels to absorb excess fat. Serve them on plates alongside the prepared salad.

Advice
Fry in a large amount of fat. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The frying fat is hot enough when small bubbles form around a wooden spoon handle.
