Steps

Preheat the oven to 200 degrees Celsius, line a low baking tray with parchment paper. Cut the puff pastry into six pieces and arrange them on the baking tray.

In a bowl, mix 2/3 of the grated cheese and sour cream. Season the mixture to taste with pepper and salt, spread it over the dough, and use a spoon or fork to slightly smooth it over the entire surface. Be careful to leave a little empty edge, which you brush with beaten egg. Place the tray in the preheated oven for 10 minutes.

Cut the bacon into smaller pieces. Carefully crack one egg into the center of each piece of dough and surround it with bacon pieces. Sprinkle the remaining cheese on top. Place the tray back in the preheated oven for another 8 to 10 minutes, or until the egg whites are nicely set.

Serve the baked dough pieces with egg, cheese, and bacon on plates while they are still hot.
