Broccoli Cheddar Soup

Ingredients

4 spoon Butter, unsalted

1 piece Onion, raw

2 piece Carrot, fresh

1 piece Broccoli, fresh

1 pod Garlic, fresh

500 ml Soup base, chicken, cube

250 ml Sweet cream

30 g Wheat flour, white, multi-purpose

200 g Cheese, Cheddar
Steps

Peel the onion and garlic, then finely chop them separately. Clean and wash the broccoli and carrot. Grate the carrot and cut the broccoli into florets. Do not discard the stem; peel it and cut it into pieces. Grate the cheese.

In a small pot, melt a tablespoon of butter and sauté the chopped onion until translucent. Add the broccoli and carrot, and cook the vegetables over medium heat for 2 minutes, stirring constantly. Then add the garlic and pour in the broth (water). Bring to a boil, then reduce the heat slightly and simmer the vegetables for 10 minutes until they soften but still hold their shape. Drain the cooked vegetables, reserving the broth in which they were cooked.

In a larger pot, melt the remaining butter and lightly brown the flour. Slowly start adding the vegetable broth, stirring constantly with a whisk to prevent lumps. Once all the broth is added, stir in the cooking cream and all the previously cooked vegetables. Season the soup with pepper and salt to taste, but do not overdo it, as we will add cheese later. If desired, you can also add a bit of ground paprika and cayenne pepper.

Let the soup come to a boil, then cook it over medium heat until it thickens slightly. Add the grated cheese to the pot, reserving some for garnish. Immediately remove the soup from the heat and continue stirring until all the cheese is melted.

Serve the prepared soup in soup bowls. Garnish with the reserved cheese and serve with garlic croutons.

Cheddar is a type of hard cheese originating from the southwest of England. The intensity of its flavor depends on the aging time. If you dont have cheddar, you can use another cheese that melts well.
